How to Cook Pan Fried Halibut Fillets With Olive Relish

Halibut fillets are dusted with flour, sauteed in a butter and olive oil mixture, before being topped with an olive relish. Serves 1 to 2 depending on appetites.

Ingredients

  • 2 halibut fillets
  • 1 cup flour
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2/3 cup green olives, chopped
  • 2 to 4 cloves roasted garlic, chopped
  • 1/3 cup roasted tomatoes packed in olive oil, chopped
  • 2 tablespoons oil from roasted tomatoes
  • Pinch salt and pepper

Steps

    Mix together flour, salt and pepper.

    Dredge the fish fillets in the seasoned flour mixture.

    Add the butter and olive oil to the skillet.

    Heat butter and olive oil until almost nutty brown.

    Coarsely chop the herb-flavored olives.

    Coarsely chop the roasted tomatoes packed in olive oil. Reserve 2 tablespoons of the olive oil used to pack the tomatoes.
