How to Cook Namkeen Gosht

Namkeen gosht is a traditional savoury beef "Peshawari" recipe from Pakistan. Peshawar is well known for its meat recipes. This recipe is easy to cook and requires minimal ingredients.


  • 2 kg beef (with bones)
  • 3 cups water
  • 6 tablespoons vegetable oil
  • Salt, to taste
  • Red chilli dried whole, to taste
  • 3-4 cardamom pods
  • 1 whole onion, peeled

    Prepare the beef. Take the beef (with bones) and lightly rub it with salt. You don't want it to be too salty. Keep aside for 10 to 15 minutes.

    Take a pressure cooker and add the water, salt-rubbed beef, red chillies, whole peeled onion (not chopped or sliced) and cardamom pods.

    Cover the pressure cooker. Let it cook under pressure for 25 minutes.

    Open the cooker after 25 minutes. Check whether the beef is tender or not (it should be falling off the bones).

    Reduce the water by cooking it with the lid off. Cook it to a thicker consistency, ensuring that the curry is runny. Thus, do not over dry the beef–-ensure that there are at least 1.5 glasses of water in as it cooks.

    Serve hot with chapati or flat bread.


  • Use a pressure cooker for best results but if it's not available, use a pot and extend the cooking time to 45 minutes, with the lid on.
  • Keep the curry runny (the curry will have less color and lean more towards being transparent).
  • This can also be served with steamed rice.
  • This is a great dish for frail older people or sick people with a sore throat or who require a soft diet.


  • While using a pressure cooker, follow the manufacturer's instructions.
  • Make sure that there is no steam pressure left in the cooker before you open the pressure cooker.
