How to Can Green Beans

Green beans are the easiest to can of most vegetables and yet it is one of the most eaten on a regular basis. Nutritious and good, green beans of all variations make for a great start to learning how to can.

Steps

    Wash the selected variety of green bean.

    Snap or cut bean into half to one inch pieces, discarding ends.

    Place in a pan of water and slightly blanch.

    Fill heated canning jar to the rim with beans.

    Fill remaining jar with hot water or juice from the blanching.

    Add one teaspoon of salt.

    Place hot lid on jar.

    Place completed jars in canner.

    Can jars for 20 to 25 minutes generally but will vary depending on jar size, altitude and canning device.

    Let the canner cool down to release its pressure completely. Then remove jars.

    Canned jars last for up to 120 years in a cool (35 to 75 degrees), maybe longer but no one has ever tested past 120 years.

Tips

  • Always clean the mouth of the jar before placing the lid on tightly.
  • Always stick a spatula down the inside of the jar before adding the salt to release all air bubbles.

Warnings

  • Use a special removal tool to remove the hot jars from the hot water in the pressure cooker to prevent burns.
