How to Bake Root Beer Float Cupcakes

Frothy and filling, this is a delicious recipe that really tastes like a root beer float in a little cake. Use a cake mix to make it really simple and easy.

Ingredients

  • White cake mix, standard size package
  • 2 tablespoons of root beer extract (essence), plus 1/2 teaspoon extra
  • 1 cup powdered sugar for glaze and 1 cup for frosting
  • 1 1/2 teaspoons milk
  • 1 1/2 cups whipping cream
  • 4 oz (120ml) cream cheese

    Mix the cake mix as directed on box. As well, add the 2 tablespoons of root beer extract to the batter.

    Make root beer glaze. Mix the powdered sugar, milk, and another 1/2 teaspoon of root beer extract.

    Remove the cupcakes from the oven to cool. When the cupcakes have cooled, put a little root beer glaze on each cupcake.

    Make the cream frosting. Whip the whipping cream with the cream cheese until soft peaks form. Gradually add the powdered sugar and beat until stiff peaks form.
