How to Bake Lavender Cake

Lavender cake is a delightful way to use lavender in cooking. It is important that the lavender is organic (not sprayed) for culinary use. Lavender taken from the garden is ideal but should be washed first. Also, don't be tempted to use too much lavender, as it has a very strong flavour that will overwhelm the cake.


  • 2 cups water
  • 2 tablespoons white vinegar
  • 3/4 cup macadamia, rice bran, or olive oil
  • 2 teaspoons vanilla essence (extract)
  • 2 teaspoons crushed lavender buds
  • 3 1/2 cups plain (all-purpose) flour
  • 1 cup raw sugar or dextrose
  • 1 teaspoon salt
  • 2 teaspoons baking soda (bicarbonate of soda)
  • Icing sugar
  • Rosewater, a few drops or lemon essence
  • Purple food colouring (optional)

    Collect the lavender. If you grow your own lavender, pick the lavender buds from the garden, early morning. Wash them and dry on a paper towel before proceeding. If you don't have your own lavender, purchase lavender buds from a specialty grocery store.

    Preheat the oven to 180ºC/350ºF. Prepare the cake tin with baking paper.

    Place the water, vinegar, oil, essence and lavender buds into a medium mixing bowl.

    Mix together the flour, sugar, salt and baking soda. Stir through well.

    Combine the flour mixture and the liquid mixture. Beat together until well blended.

    Pour the cake batter into the cake tin. Smooth over the top.

    Place in the oven and bake for 40 minutes. The cake will be ready when a skewer comes out clean.

    Remove from the oven. Leave to cool in the pan for 5 minutes, then place on a wire cooling rack to cool completely.

    Ice the cake. Make the icing using either rosewater or lemon essence for flavouring (either is superb with lavender cake). For increased effect, add a drop of purple food colouring for a light lavender shade. Leave to set.

  • Garnish with a few lavender flowering stems on the icing before it sets if wished.
